Mrs. Ginger Higgins Cox, 81, of Statesville, died Wednesday, December 28, 2016, at her home. Ginger was born in Pikeville, TN on March 24, 1935, and was the daughter of the late Owen and Annabelle Higgins. She was the youngest of eight children and until her death, was the last surviving of her family. She attended Bledsoe County schools and on August 20, 1966, she married Tom Cox, who survives. Ginger was a woman who loved to cook, bake, and was an avid organic gardener. She had a rare sense of humor and a great judge of character. Ginger could carry on a conversation with anyone. She was one that knew no strangers and her family and friends often sought her out for her opinion on many matters. She received Jesus Christ as her personal savior and her greatest love was for her family. In addition to her husband of 50 years, she is survived by one daughter, Lisa Mayfield of Statesville, along with three sons, Scott Rymer (Jenny Poliquin) of Statesville, Tom Cox (Daysi) of Concord and Jim Cox (Tangie) of Stony Point. She is also survived by two step-daughters, Lisa Bowman (Beau) of Tulsa, OK and Cathy Stumtf (Cox) of Phoenix, AZ along with three grandsons, John Harding of Statesville, Alex and Gabriel Cox, both of Concord and her friend in Christ, Marsha Hesson (Duke) of Statesville. Funeral services for Ginger Cox will be held 2:00 PM Monday, January 2, 2017, in the Nicholson Funeral Home Chapel with Kenneth McCoy officiating. Burial will follow in the Iredell Memorial Gardens Cemetery. The family will visit with friends Sunday evening from 6:00 until 8:00 PM at Nicholson Funeral Home. In lieu of flowers, memorials may be made to the National Parkinson Foundation, 200 SE 1st Street, Suite 800, Miami, FL 33131.
